
Cranberry Orange Gluten-free Dairy-free muffins

This recipe is hands down my favorite gluten free-dairy free muffin recipe. This one was created in my own kitchen and tested for the perfect consistency. Something I love about this recipe is that you can use different “mix-ins.” You can substitute the cranberry and orange for blueberries and lemon. Or for a chocolate flavor you could do enjoy life mini chocolate chips and chopped pecans. For a cinnamon flavor you can add a tablespoon of cinnamon and some chopped pecans. The options are endless. :) I love the combination of almond flour and tapioca flour in my gluten free recipes because it adds the perfect consistency to the flour. Enjoy!!
Listed below is the ingredients I used for the cranberry orange muffins.
Dry ingredients-
2 cups of almond flour
1/2 cup of tapioca flour
1tsp of baking powder
1/2 tsp of baking soda
1/4 tsp salt
Wet ingredients-
2 eggs
1/3 cup of coconut oil (slightly cooled)
1/2 cup of maple syrup to your liking
1/4 cup of freshly squeezed orange juice
1tsp of vanilla
Mix ins-
1/4 cup of orange zest or several tablespoons (to taste)
1 cup of chopped cranberries (I like to half or quarter them so they divide evenly in the mix)
Garnish-
Dusted powdered sugar
Fresh orange glaze with a tblsp of orange juice and 1/2 cup of powdered sugar
Directions
1) Preheat the oven to 350 degrees.
2) Mix the dry ingredients in a bowl -set aside.
3) In a separate bowl- Mix the wet ingredients, except the coconut oil.
4) Combine the wet and dry ingredients. Next, slightly melt the coconut oil, allow to cool but not harden. Mix into the ingredients.
5) Add in the mix ins, the orange zest and chopped cranberries.
6) Using a 12 tin muffin pan spread the batter evenly in the muffin cups. (I love the silicone oven safe ones)
7) This recipe makes one dozen muffins.
8) Bake the muffins for 20-25 minutes on 350 until slightly golden. (Keep a close eye, depending on your oven the magic number could be 23 minutes)
9) Take the muffins out and allow to cool completely before garnishing with powdered sugar or the glaze.
